Guest guest Posted October 30, 2001 Report Share Posted October 30, 2001 * Exported from MasterCook * Roasted Tomato Salsa Recipe By : Healthful Cooking, Mary Carroll, StarTrib 8/01 Serving Size : 12 Preparation Time :0:00 Categories : Side Dishes Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 medium-size plum tomatoes 1 tablespoon olive oil 1/2 avocado -- diced 1 ear corn -- kernels from 1/3 cup minced white onions 3 cloves garlic 2 teaspoons rice vinegar -- (or to taste) 1 teaspoon chopped parsley or cilantro 1/2 teaspoon minced jalapeño pepper Salt -- to taste Makes about 3 cups. Halve tomatoes and brush lightly with olive oil. Grill over medium coals or broil under high heat until lightly browned, about 5 to 10 minutes, turning once. Dice tomatoes. In medium bowl, combine tomatoes, avocado, corn, onions, garlic, vinegar, parsley or cilantro, jalapeño and salt. Let stand 30 minutes at room temperature.
