Roasted Tomato Salsa

Amount Measure Ingredient -- Preparation Method

6 medium-size plum tomatoes

1 tablespoon olive oil

1/2 avocado -- diced

1 ear corn -- kernels from

1/3 cup minced white onions

3 cloves garlic

2 teaspoons rice vinegar -- (or to taste)

1 teaspoon chopped parsley or cilantro

1/2 teaspoon minced jalapeño pepper

Salt -- to taste

 

Makes about 3 cups.

 

Halve tomatoes and brush lightly with olive oil. Grill over medium coals

or broil under high heat until lightly browned, about 5 to 10 minutes,

turning once. Dice tomatoes.

 

In medium bowl, combine tomatoes, avocado, corn, onions, garlic, vinegar,

parsley or cilantro, jalapeño and salt. Let stand 30 minutes at room

temperature.
