Mango Lime Salsa

Amount Measure Ingredient -- Preparation Method

1 cup finely diced mango

1/2 large red bell pepper -- seeded and chopped

1/4 cup finely diced red onion

1 small fresh jalapeño chile -- seeded and diced

2 cloves garlic -- minced

3 tablespoons lime juice

1 tablespoon olive oil

1 tablespoon chopped cilantro

Salt and freshly ground pepper -- to taste

 

Makes about 3 cups.

 

Tropical fruits make delicious salsa; serve this mango salsa as a condiment

for grilled summer dishes.

 

In medium bowl, combine mango, bell pepper, onion, chile, garlic, lime

juice, oil, cilantro, salt and pepper. Let stand at room temperature 30

minutes.
