Dried Tomatoes With Herbs

2 pounds ripe Roma tomatoes -- halved

2 tablespoons sea salt or to taste -- up to 4

1 teaspoon ground black pepper -- up to 2

1 tablespoon dried marjoram

1 tablespoon dried basil

 

Makes 4 cups.

 

This recipe for dried tomatoes makes a delicious and inexpensive

alternative to the store-bought version. Feel free to use less salt if you

prefer -- the flavor will only be slightly affected.

 

Seed tomatoes and discard seeds. Place halves, cut side up, on large

baking sheet lined with parchment paper. Sprinkle with salt, pepper,

marjoram and basil.

 

Dry in oven at 200 degrees 6 to 8 hours or until tomatoes are firm, chewy

and shriveled around edges.
