Guest guest Posted October 30, 2001 Report Share Posted October 30, 2001 * Exported from MasterCook * Dried Apricots Recipe By : Healthful cooking, Mary Carroll, StarTrib 10/01 Serving Size : 12 Preparation Time :0:00 Categories : Fruits Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup honey 1/2 cup water 1 lemon -- Juice of 2 pounds just-ripe apricots -- halved and pitted Makes 12 servings. A honey-lemon dip keeps the apricots from darkening as they dry. Adapted from " Putting It Up With Honey, " Quicksilver Productions, 1979. In small bowl, combine honey, water and lemon. Dip apricots in honey mixture. Spread them, cut side up, on several large baking sheets lined with parchment paper. Dry in oven at 225 degrees 4 hours or until fruit is firm, chewy and shriveled around edges. Cool.
