Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound radiatore 1/4 cup extra-virgin olive oil 1 large garlic clove -- pressed 1 lemon -- juice and zest of 2 teaspoons white miso paste 1/3 cup water 3 yellow tomatoes -- chopped, up to 4 (2 to 2 1/2 cups) 2 tablespoons snipped fresh chives salt and freshly ground white pepper Radiatore, or " little radiators, " are used in this light and lively pasta dish made with fresh yellow tomatoes. Miso, a concentrated soybean paste, adds a salty richness to this sauce. A traditional Japanese ingredient used to make soups and enrich sauces and dressings, miso is a blend of fermented soybeans and grains that is said to have many health benefits. It is available at natural foods stores. Cook the radiatore in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 minutes. While the pasta is cooking, heat the oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 30 seconds. Reduce heat to very low, and stir in lemon juice and zest. Blend the miso into the hot water until smooth and stir it into the sauce. Add the tomatoes and keep warm over low heat. When the pasta is cooked, drain it and place in a serving bowl. Add the sauce, chives, salt and white pepper to taste, and toss gently to combine.
