Guest guest Posted October 26, 2001 Report Share Posted October 26, 2001 * Exported from MasterCook * Spicy Yam and Potato Soup - adapted Recipe By :Lucy Saunders Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cloves garlic -- peeled and minced 1 teaspoon ground turmeric 1 teaspoon ground cumin 1 teaspoon hot paprika 2 tablespoons vegetable oil 1 pound yams -- peeled and cut into 1/2-inch cubes 1 pound white potatoes -- peeled and cut into 1/2-inch cubes 1 quart vegetable stock salt and freshly ground pepper to taste 1/3 cup chopped cilantro chili croutons -- for garnish (Recipe in directions) Saute garlic and seasonings in oil in a 2-quart saucepan over very low heat until garlic is light gold (not browned). Add yams and white potatoes and stir to coat with garlic and seasonings. Turn up flame to medium and saute for 10 minutes. Pour in stock and cook until potatoes are tender, about 20-25 minutes. Using a soup ladle, remove some of the potatoes and broth from the pot and place in a blender. Puree on high speed until smooth and return puree to soup pot. Add salt and pepper to taste. To serve, garnish with cilantro and Chili Croutons. CHILI CROUTONS 3 tablespoons vegetable oil 2 teaspoons chili powder 2 slices white sandwich bread Mix oil and chili powder and spread on both sides of bread.
