Saute first the eggplant strips in a little of the oil and remove from the pan; repeat with the zucchini. 2. Saute garlic, onion and green pepper for 2 to 3 minutes, then place the tomato slices on top, cover the pan and continue cooking for 5 minutes. 3. Stir in the eggplant, zucchini, capers and parsley. Season to taste. Cover and simmer for 15 minutes or until tender. Cook the pasta; drain and place in a serving dish. 5. Whilst the pasta is cooking, in a large frypan, heat 2 tbsp of olive oil. Sauté garlic and add pinenuts. Add the cooked pasta, broccoli and remaining oil. Toss through until well combined.
