Orgran Corn and Parsley Fettuccini with Vegetable Medley

1 8.8-oz package Orgran corn and parsley fettuccini

1 small eggplant; peeled -- cut into 1/3-inch strips

3 tablespoons olive oil

1 zucchini -- thinly sliced

1 onion -- thinly sliced

1 green bell pepper -- thinly sliced

1 garlic clove -- crushed

3 tomatoes -- peeled and sliced

1/2 tablespoon capers -- drained

2 tablespoons chopped parsley

salt and black pepper

cheese for optional topping

 

1. Saute first the eggplant strips in a little of the oil and remove from the

pan; repeat with the zucchini.

 

2. Saute garlic, onion and green pepper for 2 to 3 minutes, then place the

tomato slices on top, cover the pan and continue cooking for 5 minutes.

 

3. Stir in the eggplant, zucchini, capers and parsley. Season to taste. Cover

and simmer for 15 minutes or until tender.

 

Cook the pasta; drain and place in a serving dish.

 

5. Pour the sauce over the pasta; sprinkle with parmesan or cheddar if desired.

1/2 pound Orgran Garlic and Parsley Rice Spiral Pasta -- (1

package)

3 cloves garlic -- crushed

2/3 pound broccoli flowerets -- cooked

3 ounces pine nuts

2 tablespoons olive oil -- plus

1 teaspoon olive oil

salt and pepper to taste

parmesan cheese

 

Cook pasta according to directions on the packet. Whilst the pasta is cooking,

in a large frypan, heat 2 tbsp of olive oil. Sauté garlic and add pinenuts. Add

the cooked pasta, broccoli and remaining oil. Toss through until well combined.

Serve immediately with parmesan cheese.
