I've made pumpkin like this one. our new five-spice powder is a blend put out by

mccormick - " thai seasoning " -- it includes chile pepper, ginger, coriander,

cumin, cinnamon, star anise, salt, garlic, lemon peel, shallots etc...

Roast Pumpkin With Tamari and Five Spice Powder

Amount Measure Ingredient -- Preparation Method

2 pounds pumpkin -- (1 1/2 to 2)

2 teaspoons vegetable oil

1 tablespoon toasted (Asian) sesame oil

1 tablespoon tamari (may substitute soy sauce)

1/2 teaspoon five-spice powder

1 teaspoon toasted sesame seeds (optional)

 

1. Preheat the oven to 425 degrees.

 

2. Using a large cleaver or a heavy knife, cut the pumpkin in half. Using a

strong metal spoon, scrape out the seeds and any stringy stuff and discard.

Slice the pumpkin into 1 1/2-inch-thick wedges. Using a vegetable peeler or

paring knife, peel the wedges. Cut the wedges into 1-inch chunks and place in a

large bowl. Add the vegetable and sesame oils, tamari and five-spice powder and

toss to coat evenly.

 

3. Spread the mixture on a rimmed baking sheet and roast for 20 minutes. Using a

metal spatula, turn the pumpkin and roast until the pumpkin has caramelized on

the edges and feels tender when pierced through the thickest part with a skewer

or thin knife, 15 to 20 minutes more. Transfer to a bowl, sprinkle with sesame

seeds and serve.

 

Per serving: 77 calories, 2 gm protein, 10 gm carbohydrates, 4 gm fat, 0 mg

cholesterol, 1 gm saturated fat, 170 mg sodium, 1 gm dietary fiber
