Guest guest Posted October 23, 2001 Report Share Posted October 23, 2001 * Exported from MasterCook * Cabbage Rolls Recipe By : The Cooking Cardiologist, by Richard Collins, page 101 Serving Size : 6 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Rice Vegetables Soyfoods Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 large cabbage leaves -- washed 1 cup Minute Rice 1 cup water 1 cup onion -- diced fine 1 package Gimme Lean beef -- thawed 1 clove garlic 1/2 cup Egg Beaters -- (egg substitute) salt and pepper -- to taste 14 ounces canned tomato sauce Serving Size: 6 In a large sauce pan steam cabbage leaves in small amount of water, 3 minutes. Remove from heat, drain and place on paper towels. Place 1 cup Minute Rice and 1 cup of water in small microwave dish with cover. Microwave on high 6 minutes. Dice onion very fine or process in food processor. Place in another small microwave bowl with cover and microwave on high for 3 minutes. In large mixing bowl place Gimme Lean, rice, onion, garlic, Egg Beaters, salt and pepper to taste. Mix well. (I use my hands, as if preparing a meat loaf.) Spray a 9x13 inch baking dish. Place small amount of tomato sauce on bottom. Divide stuffing mixture equally by placing down the center of leaf. Roll one side and then the other, place seam side down in the baking dish. Pour remaining tomato sauce over rolls. Cover and bake in a 350 degree oven for 50 minutes. Nutritional analysis: Calories 165.
