Gimme Lean Potato Boats

4 large potatoes -- baked

1/2 cup lite soy milk

14 ounces Gimme Lean sausage

1 small onion -- chopped fine

1/2 cup fat-free sour cream

3 teaspoons horseradish sauce

1/4 cup grated fat-free parmesan cheese

2 teaspoons liquid smoke flavoring

salt and pepper

paprika

 

Serving Size: 4

 

Wash potato skins and prick with a fork. Bake at 400 degrees for 60-70

minutes or until tender. Allow potatoes to cool to the touch. Slice a

small portion off the top of each potato, carefully scoop out the pulp,

leaving a 1/4 inch shell. In a bowl mash the pulp with milk, sour cream,

horseradish, salt and pepper to taste. Set aside.

 

In a saucepan sauté onion in small amount of water until tender, season

with salt and pepper. Add the Gimme Lean and liquid smoke, mix

well. Spoon into the potato shells, top each with 1/4 of the mashed potato

mixture; sprinkle with parmesan cheese and paprika. Bake in shallow baking

dish for 20-25 minutes or until thoroughly heated. Set oven at 400 degrees.

 

Comment: serve with fresh steamed asparagus, cranberry relish and low fat

bread sticks.
