Parsnip Tatin With Cumin Butter

8 tablespoons butter -- divided use

1 tablespoon olive oil

3 shallots -- thinly sliced

1 garlic clove -- crushed

4 small parsnips -- halved lengthways

1/4 cup light soft brown sugar

2 tablespoons balsamic vinegar

1/2 lemon -- juiced

2/3 pound puff pastry -- thawed if frozen

2 teaspoons ground cumin

1. Preheat the oven to 400F. Heat 2 tablespoons of the butter and the oil in a

large frying pan. Fry the shallots and garlic for 1 minute. Remove and set

aside. Add the parsnips to the pan and cook for 5-6 minutes until golden. Return

the shallots and garlic. Stir in the sugar, vinegar and lemon juice, season and

simmer for 8-9 minutes until caramelized, turning occasionally. Remove and set

aside.

 

2. Roll out the pastry on a floured surface and cut out a 9.8-inch circle.

Arrange the parsnips, cut-side up, in the bottom of a 9-inch spring-form tin.

Spoon the shallots and juices over. Lay the pastry on top and bake for 30

minutes until golden.

 

3. Soften the remaining butter and mix with the cumin and a little pepper.

Chill. Take the tatin from the oven and set aside for a few minutes before

inverting on a plate. Cut into wedges and top with a little of the butter to

serve.
