Guest guest Posted October 19, 2001 Report Share Posted October 19, 2001 * Exported from MasterCook * Farfalle With Golden Raisins And Caramelized Shallots Recipe By : Pasta for all Seasons, Robin Robertson, page 8 Serving Size : 4 Preparation Time :0:00 Categories : Fruits Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound farfalle 1/3 cup extra-virgin olive oil 1 cup shallots -- quartered lengthwise 1/3 cup golden raisins salt and freshly ground black pepper minced fresh flat-leaf parsley -- for garnish The sweetness of the caramelized shallots is enhanced by golden raisins in this simple but satisfying dish. Raisins are a common ingredient in Sicilian cooking, owing to the Middle Eastern influence from the seventh-century Moslem invasions. Cook the farfalle in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 to 10 minutes. While the pasta is cooking heat 2 tablespoons of the oil in a large skillet over medium heat. Add the shallots and cook until softened, about 5 minutes. Reduce heat to low and continue cooking until the shallots are lightly browned and caramelized, about 5 to 7 minutes longer. Stir in the raisins and keep warm over low heat. When the pasta is cooked, drain it well and place in a serving bowl. Drizzle with the remaining olive oil, add the sauce, and season with salt and pepper to taste. Sprinkle with minced parsley toss gently, and serve immediately.
