Spinach Artichoke Casserole

1 package frozen chopped spinach -- (10-oz.) thawed and squeezed

dry

1 can artichoke hearts -- (14-oz.) drained and chopped

4 scoops Unflavored Health SourceTM Soy Protein

Shake Powder

3 oz. fat-free cream cheese, light, or regular -- softened

1/2 cup nonfat sour cream

2 Tbsp. minced green onion

2 tsp. prepared horseradish

1 jalapeno pepper -- seeded and chopped

1/2 tsp. salt

1/4 tsp. ground black pepper

1/2 cup shredded fat-free sharp Cheddar cheese

Vegetable cooking spray

 

1. Combine all ingredients.

2. Spread mixture into a 9-inch pie plate sprayed with cooking spray

3. Bake at 350° F for 15 to 18 minutes or until heated through
