Guest guest Posted October 17, 2001 Report Share Posted October 17, 2001 * Exported from MasterCook * Tiramisu Recipe By :Dana Jacobi Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 16 ounces silken tofu -- (16 to 19 oz) drained 1/2 cup soy cream cheese 1/3 cup superfine sugar 4 tablespoons dark rum 2 tablespoons brandy 2 teaspoons fresh lemon juice 1 1/4 cups cold espresso or strong coffee 20 savoiardi biscuits or ladyfingers 1 1/2 ounces dark chocolate Combine the tofu, cream cheese, sugar, 1 tablespoon of the rum, the brandy, and lemon juice in a food processor and whirl until well-blended. Set aside. Set out an 8-inch square baking dish. Combine the coffee with the remaining 3 tablespoons rum in a shallow bowl. Turn the biscuits, one at a time, in the liquid, working quickly. They will just begin to soften. Line the baking dish with them as you go. Ten biscuits should cover the bottom of the baking dish completely. Spread half the tofu mixture over the biscuits. Grate 1 ounce of the chocolate and sprinkle half of it over the tofu. Repeat, making a second layer of biscuits and cream, topped with grated chocolate. Chop the remaining chocolate into small chunks. Sprinkle them over the top of the tiramisu. Cover the dish with plastic wrap and refrigerate for at least 2 hours, up to overnight. (This dessert will keep for up to 3 days, covered and refrigerated.) Serve cold. NOTES : This creamy dessert is what happens when the best chocolate is combined with tofu, savoiardi biscuits (Italian ladyfingers), and a bit of creativity.
