Lemon Tiramisu

Syrup

2 1/4 cups sugar

zest of 1 lemon -- removed in long strips

1/4 cup limoncello or lemon-flavored liqueur

Lemon Cream

16 ounces silken tofu -- (16 to 19 oz) drained

1/2 cup soy cream cheese

1/2 cup sugar

3 tablespoons limoncello or lemon-flavored liqueur

1 teaspoon vanilla extract

grated zest and juice from 1 lemon

20 savoiardi biscuits or ladyfingers

1/2 cup crushed amaretti

1/4 cup toasted sliced almonds

 

To make the syrup, combine the sugar and lemon zesr with 1 1/4 cups water in a

deep saucepan. Bring to a boil, remove from the heat, and let it steep for 1

hour. Remove the strips of lemon zest, and stir in the limoncello. (The syrup

can be made ahead up to this point. It will keep for up to 2 days, tightly

covered and refrigerated.)

 

To make the cream, combine the tofu, cream cheese, sugar, limoncello, vanilla,

and lemon zest in a food processor and whirl until blended. Mix in 2

tablespoons of the lemon juice and set aside.

 

Set out an 8-inch square baking dish. Combine 1 cup of the lemon syrup with the

remaining lemon juice in a shallow bowl. Turn the biscuits, one at a time, in

the liquid, working quickly. They will just begin to soften. Line the baking

dish with them as you go. Ten biscuits should cover the bottom of the baking

dish completely.

 

Spread half the lemon cream over the biscuits. Sprinkle with half the amaretti.

Repeat with the remaining ingredients. Sprinkle the toasted almonds over the

top.

 

Cover and refrigerate for at least 2 hours before serving. Serve cold.

NOTES : I prefer this golden version of the traditional tiramisu made with

espresso and chocolate. Its fresh flavors come from limoncello, an Italian

lemon liqueur, plus lemon zest and fresh lemon juice. Most liquor storres carry

eiither limoncello or some other lemon-flavored liqueur. Savoiardi are crisp,

long Italian ladyfinger bisquits. Amaretti are intensely flavored almond

cookies. Both are sold in Italian food stores.
