Guest guest Posted October 17, 2001 Report Share Posted October 17, 2001 recipe 2try from arnot's book * Exported from MasterCook * Date Breakfast Bars Recipe By :Breast Health Cookbook by Arnot, Sutherland, Mitchell Serving Size : 8 Preparation Time :0:15 Categories : New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup whole wheat flour 2 tablespoons soy protein powder (packed) 1 teaspoon baking powder 1 teaspoons cinnamon -- (1-1/4) 1 cups rolled oats -- (1-1/2) 1/2 cup chopped pitted dates 1/4 cup chopped walnuts 1 large egg 1/2 cup brown sugar 1/4 cup white sugar 1/4 cup extra-light olive oil -- (mild) 1/2 cup applesauce 1/8 teaspoon vanilla extract Prep: Preheat oven to 350F. 1. Stir together flour, protein powder, baking powder, and cinnamon. Add oats, dates, and walnuts and stir to combine. 2. In another bowl, beat egg. Add sugars and beat until well blended. Add olive oil; continue beating until well mixed. Stir in applesauce and vanilla. 3. Make a well in the center of flour mixture. Pour in egg mixture and stir gently until just mixed. Do not beat. 4. Spread mixture in an 8 x 8-inch nonstick pan that has been lightly brushed with olive oil. Bake in preheated oven for 35 minutes or until toothpick inserted in the center comes out clean. 5. Remove from oven and cool for 10 minutes before removing from pan.
