Spicy Vegetarian Buckwheat Noodle Salad with Orange Soy Dressing

8 ounces soba noodles

2 tablespoons sesame seeds -- toasted

1/2 cup Orange Soy Dressing (or Soy Orange Dressing) -- see

recipe

8 ounces green or napa cabbage -- shredded (2 cups)

1 1/2 cups julienned cucumber -- peel (optional)

1/2 cup julienned radishes

 

1. Make the Soy Orange Dressing.

 

2. Cook noodles as directed on package. Drain. Rinse thoroughly with cold water.

Set aside to drain.

 

3. Assemble. Toss noodles with salad dressing. Add the vegetables and toss

gently. Serve topped with sesame seeds.

EACH 1 cup serving with 2 tbs dressing: 275 Calories; 5g Fat (16.0% calories

from fat); 4g Dietary Fiber.

 

TIPS - SOBA - Japanese buckwheat noodles. CUCUMBER: peel if the skin feel waxy

and/or thick. SESAME SEEDS: lightly toast seeds in a nonstick skillet over

moderate heat for 2 to 4 minutes.
