With a bit of butter and a shower of pepper, they're simply delicious - a great change from rice. And you can substitute wheat, spelt or rye flakes. Toast the flakes in a dry skillet over medium heat, stirring frequently, until they smell good. Bring 2 cups water to a boil in saucepan. Add 1/2 teaspoon salt, then the flakes. Cover the pot, lower the heat, and cook for 5 minutes. Turn off the heat and let stand for 5 minutes more.
