Savory Barley Flakes

2 cups barley flakes

Salt and freshly milled pepper

Butter or roasted nut oils

 

SERVES 4

 

Ready in 10 minutes, barley flakes are light and easy to digest. With a

bit of butter and a shower of pepper, they're simply delicious - a great

change from rice. And you can substitute wheat, spelt or rye flakes.

 

Toast the flakes in a dry skillet over medium heat, stirring frequently,

until they smell good. Bring 2 cups water to a boil in saucepan. Add 1/2

teaspoon salt, then the flakes. Cover the pot, lower the heat, and cook

for 5 minutes. Turn off the heat and let stand for 5 minutes more. Fluff

with a fork, add butter to taste, and season with pepper.
