Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups apple juice 2 cups couscous 1 pinch sea salt ***TOPPING*** 5 pears -- peeled and sliced (5 to 6) 1 pinch sea salt 1 cup water Place apple juice and a pinch of sea salt in a pot and bring to a boil. Reduce flame to low and add couscous. Cover and simmer for 2-3 minutes. Turn off flame and let couscous sit, covered, for several minutes. Place couscous in a glass or ceramic cake pan and press down firmly and evenly. To make pear sauce for topping, place pears, salt, and water in a pot and bring to a boil. Reduce flame, cover, and simmer for 4-5 minutes, until pears are soft. Purèe in a hand food mill.
