Guest guest Posted October 13, 2001 Report Share Posted October 13, 2001 * Exported from MasterCook * Boiled Tempeh And Scallions Recipe By : The Macrobiotic Way, by Michio Kushi, page 174 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound tempeh 1 tablespoon scallion roots -- finely chopped (the white part and root hairs) 2 cups scallions sliced into 2-inch lengths water tamari Slice tempeh into pieces 2 inches long by 1 inch wide by 1/2 inch thick. Heat 1/4 cup water in a skillet. Add scallion roots and water; sauté over high flame for 2-3 minutes. Add tempeh and enough water to half cover tempeh. Bring to a boil. Cover, reduce flame to medium-low, and simmer for 25 minutes. Season with a little tamari, cover, and simmer for another 5 minutes or so. Add sliced scallions so that they sit on top of tempeh (do not mix). Cover and cook for 1-2 minutes, until scallions are tender and bright green. Remove cover, turn flame to high, and cook off any remaining liquid.
