Guest guest Posted October 12, 2001 Report Share Posted October 12, 2001 * Exported from MasterCook * Scrambled Tofu Recipe By : The Macrobiotic Way, by Michio Kushi, page 174 Serving Size : 1 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup onions -- diced 1/4 cup burdock cut into matchsticks 1/2 cup carrots cut into matchsticks 1 pound fresh tofu 1/2 cup chopped parsley dark sesame oil tamari or sea salt Heat a small amount of dark sesame oil in a skillet. Sauté onions over fairly high flame for 2-3 minutes. Layer burdock and carrots on top of onions. Crumble tofu on top. Cover, reduce flame to medium-low, and cook several minutes, until tofu is soft and fluffy and vegetables are tender. Season with a little tamari or sea salt and continue to cook, uncovered, until almost all liquid has evaporated.
