Ellen * Exported from MasterCook Mac * Vegetable and Tofu Fried Rice Recipe By : Good Morning Macrobiotic Breakfast,Aveline Kushi,Wendy Esko Serving Size : 3 Preparation Time :0:00 Categories : Whole Grains and Porridges Breakfast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon dark sesame oil 1/4 cup burdock root -- in thin matchsticks 1/2 pound firm tofu -- crumbled 1/4 cup carrots -- diced 2 cups cooked brown rice 1/4 cup scallions -- chopped 1 1/2 tablespoons tamari soy sauce Serves 3-4. Place the sesame oil in a skillet and heat up. Add the burdock and saute for 1-2 minutes. Next, add the tofu, carrots, and cooked brown rice. Cover and reduce the flame to low. Simmer for 5-7 minutes. Add the scallions and tamari soy sauce, cover, and cook for another 3-5 minutes. Remove the cover, mix, and saute 1-2 minutes longer. Remove and place in individual serving dishes.
