Guest guest Posted October 10, 2001 Report Share Posted October 10, 2001 I made this for dinner last night. I did change it a little though. I used tempeh (for the first time) instead of tofu. I had steamed the tofu last weekend and thew it into some Teriyaki sauce. It was supposed to be made the next night, but...well... Anyway, the tempeh was WELL marinated. I followed the recipe except for the sauce they made and marinated the tofu with. It was good, but really filling! WHEW! Next time I'm going to try it as listed. *GRIN* (OK, I might add some hot chili oil to it.) JJ PS: The Monarch's Feast cookbook is a local one I found in the library. It's not vegetarian. * Exported from MasterCook * Ginger Sesame Tofu with Spinach Recipe By :Cathy Sobel Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound firm tofu -- chopped into 1/2 " cubes 4 green onions, whole -- chopped 2 garlic cloves -- chopped 1 inch fresh ginger -- finely chopped 1/4 cup tamari soy sauce 2 teaspoons honey 2 pounds fresh spinach -- rinsed, stemmed and coarsely chopped 2 tablespoons sesame oil 2 teaspoons dark sesame oil 1/4 cup toasted sesame seeds 15 ounces soba noodles Place tofu cubes, onions, garlic, ginger, tamari, and honey in a container with tightly lid. Let stand 1 hour or more, tipping container upside down frequently. Steam spinach until tender. Heat sesame oils in wok or skillet. Drain tofu, reserving liquid. Put tofu mixture in heated wok and stir-fry until tofu is slightly browned. Stir in reserved liquid and heat thoroughly. Cook noodles according to package directions, and drain. Put cooked noodles into large serving bowl or platter. Add tofu and vegetables from wok, cooked spinach and toss. Sprinkle sesame seeds on top and serve.
