Sainsbury's Aduki Bean Salad or Adzuki Bean Salad

Amount Measure Ingredient -- Preparation Method

6 ounces aduki beans -- dry measure

1 red bell pepper

1 yellow bell pepper

4 spring onions

2 tablespoons white wine vinegar

1 teaspoon Dijon mustard

1 teaspoon clear honey

1/3 cup sesame seed oil

2 tablespoons sesame seeds -- toasted

 

ADUKI (ADZUKI): soak the beans overnight; cook as per pack instructions and

refresh.

 

PEPPERS: core and cut into 5mm or 1/4-inch dice - blanch and refresh

 

ONIONS: cut on a diagonal into 5mm or 1/4-inch pieces

 

SALAD BASE: Place all the ingredients into a large bowl and mix to combine.

 

DRESSING: In a screw top jar place all the dressing ingredients except for the

toasted sesame seeds and shake to combine.

 

COMBINE: Pour the dressing over the salad and mix to combine. Sprinkle with the

toasted sesame seeds and serve immediately.
