Spinach and Lentil Garlic Dhal - Red Lentils

Amount Measure Ingredient -- Preparation Method

8 ounces fresh spinach leaves -- roughly chopped

12 ounces orange lentils -- washed

4 cloves garlic -- crushed

1 tablespoon sunflower oil

1 large onion -- chopped

1 tablespoon turmeric

1 tablespoon garam masala

6 cardamom pods -- crushed

1 bay leaf

3 1/2 cups vegetable stock -- or more

salt and freshly ground black pepper

 

In a large saucepan heat the oil and fry the onion for 5-6 minutes until golden

brown. Stir in the garlic, turmeric, garam masala, cardamom pods and bay leaf.

Fry gently for 1 minute until lightly toasted.

 

Add the lentils and stock and season well. Simmer for approximately 15-20

minutes or until the lentils are just tender.

 

Stir in the chopped spinach and cook for a further 5 minutes, then serve.
