Guest guest Posted October 9, 2001 Report Share Posted October 9, 2001 * Exported from MasterCook * French Onion Soup from Siegel Recipe By :Fat Free and Delicious by Robert Siegel Serving Size : 6 Preparation Time :0:00 Categories : 2Try Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds onions -- thinly sliced, quartered 2 tablespoon whole-wheat pastry flour 1/8 teaspoon Cumin 6 cups water 1/4 cup vegetarian beef-style broth powder 5 tablespoons miso -- traditional 1 tablespoon tamari soy sauce 1 teaspoon Worcestershire (without anchovies) 1 tablespoon onion powder 1 Dash freshly ground black pepper 2 teaspoons Nutritional yeast -- for garnish 1. Peel and slice onions (about 3 cups per pound). Saute onions in stock or water to lightly caramelize. This should take 20-25 minutes, but is well worth it as the caramelizing adds a rich, sweet flavor. Add liquid while caramelizing. 2. Add flour and cumin; stir to coat onions. 3. Combine water and remaining ingredients. Bring to a boil and add onion mixture. 4. Simmer until onions are cooked. 5. Serve in soup bowls and top each with 1/2 teaspoon of nutritional yeast.
