Amount Measure Ingredient -- Preparation Method

1 tablespoon miso

1/4 fresh pepper

4 tablespoons water

1 scallion

 

Burn the skin of a pepper evenly by turning it slowly over a flame. This takes

10 to 15 minutes over a medium flame. Remove the blackened skin under running

water. Chop 1/4 of the pepper finely. Cut the scallion into tiny pieces. Dilute

miso with water and stir in the other ingredients.

 

Editor's note: Looks like mild or hot peppers may be used. - pat

1/4 onion

4 tablespoons water

2 tablespoons finely chopped fresh parsley

 

Dilute miso with the water. Add finely chopped onion and parsley. Mix well.

1 tablespoon miso

4 tablespoons sesame butter

1 tablespoon water -- or double to thin

1 teaspoon minced orange peel

VARIATION:

3 tablespoons sesame butter

1 tablespoon miso

1 tablespoon oat flour

1/2 cup water

pinch chopped fresh basil or mint

 

Mix miso, sesame butter and water. Cook 5 minutes while stirring. Some water

will evaporate and the mixture will thicken. When cooked, mix in minced orange

peel.

 

VARIATION: Cook tahini in a saucepan while stirring until golden. Add the miso

and keep stirring. Add the oat flour diluted with 1/2 cup water and pour it on

the blended miso and sesame butter. Add either basil or mint. Stir. Leave the

saucepan uncovered and cook 15 minutes, stirring constantly.
