Apricot Breakfast Bars

1 1/2 c dried apricot halves -- snipped in quarters

1 c honey

1 c raisins

6 tbsps packed brown sugar

1 1/2 c peanut butter -- just peanuts butter

1 c apricot jam

1 tbsps ground cinnamon

3 c rolled oats

1 1/2 c chopped walnuts -- or any nuts

3/4 c toasted wheat germ

3/4 c sesame seeds -- or sunflower

6 c corn flakes -- whole grain

 

In a Dutch oven combine apricots, honey, raisins, cinnamon, jam and

brown sugar. Heat and stir until mixture boils. Reduce heat slightly.

Cook, uncovered, for 1 minute, stirring constantly. Remove from heat.

Stir in peanut butter until melted. Stir in rolled oats, wheat germ nuts

and seeds until well combined. Add cereal, stirring to coat. Press

mixture very firmly (or bars will crumble) and evenly into 9x11 " pan.

Chill to set. Cut into 24 bars. Store in airtight container in

refrigerator.
