ROASTED CASHEWS: Heat 1 tbsp of peanut oil in a medium saucepan over a medium

heat. Add 1/2 teaspoon of paprika (smoked paprika is nice) 2 tsp each of tomato

puree and Worcestershire sauce, quickly stirring to combine, then add 1 cup of

roasted cashews. Contine to stir to coat nuts well, and cook for 2 minutes.

Drain on paper towel. Season with salt and pepper. Serve.

 

SPICY SEEDS: heat 1 tbsp of olive oil in a non stick frypan over medium heat.

Add 1 teaspoon of cumin seeds, stir for 30 seconds and add 1/2 cup of each of

sunflower seeds and pepitas (pumpkin seeds). Add 1 teaspoon of ground cumin and

1/4 teaspoon of turmeric, stirring to combine. Cook for 2 minutes to toast the

seeds. Add 60ml of soy sauce, stirring continously until liquid has evaporated

(about 45 seconds). Eat warm or cool.

 

CRACKERS: Visit an Asian supermarket and stock up on prawn crackers, cassava

crackers and pappadums. Heat enough vegetable oil in a wok to a depth of 3cm

over a medium high heat. Test oil temperature by dropping a cracker or pappadum

in - it should sizzle, expand and float within 5 seconds. Cook remaining

crackers or pappadums in batches, remove with a slotted spoon, and drain on

kitchen paper. Munch away on their own or serve with dips.

 

SUGAR AND SPICE ALMONDS: roast 1 cup of blanched almonds, in a 175C oven for 10

minutes. While still hot toss, almonds with 1/2 tsp each of salt and five spice

powder and 1 tsp of sugar. Serve.
