Low Fat Coffee Sponge

Amount Measure Ingredient -- Preparation Method

1 tablespoon gelatine

 

1 pinch salt

 

2 cups skim milk

 

1 tablespoon instant coffee powder

 

1 teaspoon vanilla

 

1 teaspoon liquid artificial sweetner

 

2 egg whites -- stiffly beaten

 

Soften the gelatine in the skim milk and place in a saucepan with the instant

coffee. Stir the mixture over a moderate heat until the gelatine and coffee are

dissolved. Add a pinch of salt and sweetener, stir until well combined, then

leave to cool or chill in the refrigerator until mixture starts to thicken. Add

the vanilla and gently fold in the egg whites. Combine well, then leave to chill

until firm.
