Guest guest Posted October 6, 2001 Report Share Posted October 6, 2001 * Exported from MasterCook * Low Fat Fruit Cake Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : 101 Weekly Recipe Group 101Weekly Nuked by Karen Jason & Jessica Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 500 g mixed dried fruit 1 cup dried apricots finely chopped 1 can crushed pineapple in natural juice -- (440 g ) 1/4 cup fresh orange juice 1 teaspoon mixed spice 1/4 teaspoon ground cloves 1 teaspoon bicarbonate of soda 2 egg whites 2 cups wholemeal self raising flour Line the base and sides of a deep 20cm round cake pan with three layers of baking paper, bringing the paper 5cm above the edge of the pan. Place dried fruit, apricots undrained pineapple juice and spices in a saucepan and slowly bring to the boil and simmer uncovered for 5 minutes. Then cover dish and leave to cool to room temperature. Transfer mixture to a large bowl and stir in the bicarbonate of soda. Beat egg whites in an electric mixer until firm peaks form, then fold eggs into the fruit mixture, then stir in the sifted flour, until the mixture is firm. Spread the mixture into a prepared pan and bake in a moderately slow oven for about 90 minutes (cover loosely with foil if over-browning). Cover hot cake tightly with foil and cool in pan. Suitable to freeze.
