Guest guest Posted October 6, 2001 Report Share Posted October 6, 2001 * Exported from MasterCook * Lime Pickles Recipe By : Serving Size : 0 Preparation Time :0:00 Categories : 101 Weekly Recipe Group 101Weekly Nuked by Karen Jason & Jessica Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 limes rinsed 60 g salt 1 tablespoon yellow mustard seeds 1 teaspoon fenugreek seeds seeds from 2 star anise 4 small green chillies -- chopped 125 g light muscovado sugar 1 tablespoon ground ginger 3 tablespoons water -- (3 to 4) Cut limes into quarters, put into a wide bowl, sprinkle over the salt and leave for 24 hours. The next day put mustard seeds, fenugreek, star anise seeds and chillies in a dry saucepan and cover. Place over a high heat and roast the spices, shaking the pan constantly until the mustard seeds start to pop. Remove from heat. Strain liquid from the limes into a small pan. Add sugar, ginger and water. Boil for 2 minutes, or until sugar has dissolved. Combine limes and spices thoroughly and put into two clean preserving jars. Pour over the sugar mixture until it covers the limes. Cover jars loosely and when cool, screw lids on tightly. Label each jar with the date on the pickle was made. Keep for four weeks before using.
