300 g dessicated coconut

 

1 cup sugar

 

1 cup brown sugar

 

3/4 cup pandan juice (or pandan essence diluted

 

in water)

 

2 1/2 cups glutinous flour

 

1 cup coconut cream

 

3/4 cup white sugar

 

6 large banana leaves

 

1 tb oil

 

Mix the coconut and sugars together in a saucepan and stir over low heat until

the sugar dissolves. Cool and roll into small balls.

 

Soak the banana leaves in boiling water until they change colour, remove and

drain, cool and cut into rounds about 15 cm in diameter. Mix the flour and

coconut, gradually add the pandan juice and sugar and knead to a smooth dough.

Lightly oil the banana leaves, fold into a cone shape and fill with a ball of

green dough. Press a ball of sugar into the dough and cover with another layer

of dough. Fold the corners and steam for about 15 minutes. Cool and serve.

 

Note: if banana leaves are unavailable, the dough can be steamed on a plate.
