Combine all ingredients, except the oil, in a saucepan, and simmer for about 10 minutes. Remove from the heat and whisk in the oil. Place food to be marinated in flat glass or ceramic dish. Pour marinade over, making sure it is even coated. Cover and refrigerate for at least 2 hours, turning from time to time. Return to room temperature before cooking.
