Amount Measure Ingredient -- Preparation Method

1 cup green papaya -- julienned

 

1/2 cup large red chillies -- julienned

 

1/2 cup picked bean sprouts (heads off)

 

1/2 cup ribboned continental cucumber -- diced

 

1/4 cup Vietnamese mint -- shredded

 

1/4 standard mint -- shredded

 

1/4 cup fresh coriander -- chopped

 

1/4 cup shredded fresh coconut

 

2 tbs roasted peanuts -- lightly crushed

 

fried red shallots and garlic to garnish

 

nam jim dressing

 

2 red chillies

 

2 green chillies

 

3 coriander roots

 

3 cloves garlic

 

juice of 3 fresh limes

 

20 ml fish sauce

 

1 dessertspoon palm sugar

 

Mix all the ingredients together and garnish with nam jin dressing.

 

Dressing:

 

blend all the ingredients together and use for green papaya salad
