Individual Honey Apple Tarts

1 square sheet frozen puff pastry

 

50 g butter -- plus extra for

 

greasing

 

2 tablespoons honey

 

2 golden delicious apples -- peeled and cored.

 

Grease four 1/2 cup ramekins (individual souffle dishes) with butter. Cut out 4

discs of pastry using the base of the ramekins as a guide. Rest pastry in

freezer.

 

Melt butter and honey in a small saucepan over a medium heat. Pour and equal

quantity into each ramekin.

 

Slice each apple crossways into thin rings, keeping the apple shape intact.

Divide each sliced apple into two portions, transfer the four portions into the

ramekins. Place ramekins on a baking tray and bake in 200C oven for 20 minutes.

Top each ramekin with a pastry circle and cook for a further 15 minutes until

the pastry is golden. Remove from oven. Run a knife around the inside edge of

each ramekin and invert onto serving plates.

 

Serve warm with greek yoghurt or vanilla ice cream

 

Tip: Before baking, you could add chopped walnuts to the cored centre of each

apple.
