Toasted Panettone With Nectarines

1/2 cup peach jam

 

1/2 cup water

 

1 tablespoon cointreau or orange juice

 

6 medium nectarines halved and seeded

 

individual panettone (or 200g sliced

 

panettone)

 

1/2 cup thick cream (48% butterfat) whipped

 

lightly

 

Combine the jam and water in a small saucepan.

 

Stir over a low heat until the jam is melted.

 

Simmer uncovered for 2 minutes, stir in the liqueur or orange juice.

 

Place nectarines in a medium bowl, add the jam mixture and stir gently

 

Toast the panettone slices and serve topped with the nectarine mixture and thick

cream.
