Soy Curry Over Rice

Amount Measure Ingredient -- Preparation Method

1 pint coconut milk

1 pint Vitasoy Soymilk

2 tablespoons curry powder

1/2 cup tomato -- chopped

1/4 cup bell pepper -- diced

1 quart cooked rice

 

Serves 4

 

Combine coconut milk, soy milk, curry powder and tomatoes. Simmer for

25-30 minutes. Add bell pepper and continue to simmer for an additional 10

minutes. Serve over rice.

 

Wine recommendation: FREY SAUVIGNON BLANC
