Guest guest Posted October 6, 2001 Report Share Posted October 6, 2001 * Exported from MasterCook * Soy Curry Over Rice Recipe By : Corky Powell, Western Culinary Institute, 2001 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Rice Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pint coconut milk 1 pint Vitasoy Soymilk 2 tablespoons curry powder 1/2 cup tomato -- chopped 1/4 cup bell pepper -- diced 1 quart cooked rice Serves 4 Combine coconut milk, soy milk, curry powder and tomatoes. Simmer for 25-30 minutes. Add bell pepper and continue to simmer for an additional 10 minutes. Serve over rice.
