Guest guest Posted October 6, 2001 Report Share Posted October 6, 2001 * Exported from MasterCook * Spinach And Raisin Tamales Recipe By : David Wardell, Western Culinary Institute, 2001 Serving Size : 36 Preparation Time :0:00 Categories : Appetizers And Snacks Fruits Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound maza dough 1/2 pound Spectrum Organic Shortening water -- as needed 2 teaspoons salt 1 1/2 cups onion 1 1/2 quarts Earthbound Farm Organic Baby Spinach Salad 1 1/2 cups raisins 2 tablespoons Colavita Extra Virgin Olive 36 corn husks 1 1/2 quarts soy cheese -- shredded Makes 36 tamales Mix maza dough with organic shortening, water and salt until it reaches a pasty consistency. Sauté onion, spinach and raisins in olive oil until spinach is wilted. Spread mixture onto corn husks. Add maza dough, wrap and steam tamales for approximately 30 minutes or until done.
