Potato and Green Pea Soup

12 ox potatoes

 

1 lb green peas

 

1 1/4 pints white stock or water

 

1/2 teaspoon sugar

 

seasoning

 

good handful of young pea pods

 

1/2 pint milk

 

1 sprig mint

 

Put the peas, the pods - broken into small pieces - the diced potatoes, liquid,

seasoning, and mint into the saucepan, and simmer gently for about 45 minutes.

Rub through a sieve after removing the mint. Re-heat with the milk. Garnish with

hard-boiled egg if wished.
