Sweet potatoes with brandied marmalade glaze

1 kg sweet potatoes -- thickly sliced

 

Brandied marmalade glaze

 

1/2 cup orange marmalade

 

125 ml orange juice -- (1/2 cup)

 

2 teaspoons grated fresh ginger

 

1 teaspoon french mustard

 

15 g butter

 

1 tablespoon brandy

 

Boil or steam potatoes for 5 minutes or until partly cooked. Drain, place

potatoes in lightly greased shallow ovenproof dish in single layer. Top with

Glaze, bake uncovered at 180°C for 30 minutes.

 

Brandied Marmalade Glaze: Combine marmalade, juice, ginger and mustard in pan.

Simmer uncovered for 10 minutes or until slightly reduced. Remove from heat,

stir in butter and brandy.

 

To microwave: Place potatoes in dish with 2 tablespoons of water, cook covered

on HIGH 5 minutes, drain, top with Glaze, cook on HIGH 5 minutes or until

potatoes are tender.

 

Brandied Marmalade Glaze: Reduce orange juice to 1/4 cup, combine all

ingredients in bowl except brandy, cook on HIGH 2 minutes, add brandy.

NOTES : This dish can be prepared up to a day ahead of time. Cover partly cooked

potatoes with glaze, keep covered in refrigerator until cooking time. Use the

colourful kumara or the white sweet potatoes; either gives a delicious result We

used the slightly bitter Seville orange marmalade for this recipe.

 

Note: This recipe is not suitable to freeze.
