Standard weights and measures have been used throughout this book. In case it is

wished to translate these into their American counterparts the following tables

give a comparison.

 

Liquid Measure

 

ONE PINT of liquid may be regarded as equal to TWO 10 ounce measuring cups for

all practical purposes. American pint measure is 16 ounces. The standard cup

measure throughout this book refers to 8 liquid ounces, i.e., to the 8 ounce

mark on the glass measuring cup. American tablespoons are smaller - use about ¾

quantity.

 

Solid Measure

 

1 pound butter or other fat 2 cups

 

1 pound flour 4 cups

 

1 pound Granulated castor sugar 2 cups

 

1 pound icing sugar 3 cups

 

1 pound brown (moist) sugar (packed loosley) 3 cups

 

1 pound Golden Syrup or Treacle 1 1/3 cups

 

1 pound Rice 2 cups

 

1 pound Mixed diced fruit 2 ½ cups

 

1 pound Grated Cheese (packed loosley) 4 cups

 

1 pound Rolled Oats 5 cups

 

1 pound Soft Breadcrumbs 4 cups

 

½ ounce Flour 1 level tablespoon

 

1 ounce (scant) Sugar 1 level tablespoon

 

1 ounce Butter 1 level tabelspoon

 

1 ounce Golden Syrup or Treacle 1 level tablespoon

 

3 teaspoons equals 1 tablespoon.

 

Use spoons from the average household cutlery set. Level spoon measurements are

used.
