Glazed Tofu Steaks

1 tablespoon hoisin sauce

1 tablespoon soy sauce or tamari

1 teaspoon honey or brown sugar

1 teaspoon balsamic or rice vinegar

1 teaspoon vegetarian Worcestershire sauce

1/2 teaspoon ground ginger

1/4 teaspoon Chinese five-spice powder

1/4 teaspoon garlic powder

1/4 teaspoon freshly ground black pepper

16 ounces soft, firm, or extra firm tofu

 

To make the glaze, combine the hoisin sauce, soy sauce, honey, vinegar,

Worcestershire sauce, ginger, five-spice powder, garlic powder, and pepper in a

bowl.

 

Cut the tofu lengthwise into 4 slices. Place them on a couple of layers of

paper towels to drain until the towels are soaked through, 2 minutes.

 

Heat a skillet large enough to hold the tofu in one layer over medium-high heat.

Blot the top of the tofu well. Add it to the dry pan. Stir the glaze mixture

and pour it over the tofu.

 

Turn the tofu to coat it all over with the glaze. Cook for 3 minutes; the glaze

will thicken around the tofu, which will brown on one side. Turn the tofu and

cook until the glaze in the pan is almost dry and the tofu is browned on the

bottom.

 

Serve hot or lukewarm. (Glazed tofu will keep for up to 4 days, covered, and

refrigerated. Bring to room temperature or warm gently before serving.)

NOTES : Tofu lovers find these generoud crusty cutlets as appealing as the lamb

chop or steak that tempts a carnivore. When these steaks cool, they become firm

enough to slice or dice. Cut up, the tofu is good added to salads and

stir-fried, including the Broccoli with Black Bean Sauce.
