Twenty-Minute Tacos

2 tablespoons canola oil

3/4 cup finely chopped onion

3 garlic cloves -- finely chopped

1 12 oz package refrigerated soy crumbles, or 2 cups

frozen

1/4 cup dark beer

1/2 cup vegetable broth

2 teaspoons chili powder

1 teaspoon dried oregano

2 large jalapeno peppers -- seeded and finely chopped

1/3 cup salsa -- drained

1/2 cup chopped cilantro

salt and freshly ground black pepper

8 taco shells

shredded lettuce

salsa

shredded jack or tex-mex soy cheese

sliced avocado

soy sour cream

chopped scallion

 

Heat 1 tabespoon of the oil in a nonstick skillet over medium-high heat. Add

1/4 cup of the onion and a third of the garlic and saute until the onion is

soft, 2 to 3 minutes. Mix in the soy crumbles, beer, and broth. Simmer until

the liquid has almost evaporated, about 8 minutes. Set the mixture aside. Wipe

out the skillet.

 

Heat the remaining 1 tablespoon oil in the pan. Add the remaining 1/2 cup onion

and the rest of the garlic and saute until the onion is soft, about 4 minutes.

Mix in the chili powder, oregano, and jalapenos, stirring uuntil the mixture is

fragrant, about 30 seconds. Add the crumble mixture, drained salsa, and

cilantro. Season to taste with salt and pepper. Cook for 3 to 4 minutes to

meld the flavors.

 

Spoon 1/4 cup of the filling into each taco shell. Top with lettuce, salsa,

cheese, sliced avocado, sour cream, and chopped scallion, as you wish.

NOTES : Two of these robust tacos provide nearly all the soy protein experts

recommend you should eat in a day to help reduce the risk of heart disease, but

no one will think about that once they taste them. Topping them with soy cheese

and sour cream may not add much benefit, but they keep this a cholesterol-free

dish.
