Barkley Pumpkin Fruit Cake

1 cup cooled mashed pumpkin

 

500 g dried fruit

 

125 g raw sugar

 

1 tablespoon Golden syrup

 

1 cup water

 

1 teaspoon bicarb soda

 

2 eggs

 

125 g wholemeal plain flour

 

125 g self raising flour

 

boil fruit, sugar, syrup and water, remove from heat and add bicarb soda. Cool

fold in eggs, pumpkin fruit and beat until smooth. fold in flours and bake at

160C for one hour, until cooked.

NOTES : Donated by Lirit Vance. Her Grandmother died in January 2000, and she

donated all of her grandmother's recipe books and recipe discs to me in March

2000. She wanted them to go to a good home, seeing that she doesn't cook. I am

greatly appreciated in her doing this. This recipe has come from those books and

discs, and up to receiving them, they have never to my knowledge seen their way

onto the web, or any recipe group.
