Greens with Sun-Dried Tomatoes

1 teaspoon olive oil

3 cloves garlic -- minced

1/4 cup finely chopped onions

3/4 cup vegetable stock

3 cups kale -- finely chopped

3 cups collard greens -- finely chopped

1/2 cup sun-dried tomatoes -- coarsely chopped

 

These high-calcium shredded greens are delicious served as a hot side

dish. They're also terrific stuffed into seeded tomatoes (or small

red or yellow bell peppers), then baked until soft. You'll find the

end result is worth the extra effort.

 

Tip: Try cooling and tossing into a green salad to perk up the flavor

while increasing the salad's calcium content.

 

In a large nonstick skillet, heat oil over medium-high heat. Add

garlic and onions; saute for 2 minutes. Stir in vegetable stock and

greens. Reduce heat to low and cook, stirring occasionally, for 8

minutes.

 

Add sun-dried tomatoes; toss with greens. Cook 2 minutes or until

heated through. Serve hot.
