Kale and Soy Cheese Balls

3 cups finely chopped kale

2 cups bread crumbs

- whole wheat or regular

3/4 cup vegetable stock

1/2 cup grated soy cheese

1/4 cup finely chopped onion

1 tablespoon olive oil

1/2 teaspoon soy sauce

1/2 teaspoon garlic salt

 

Makes about 15 balls.

 

Slightly firm on the outside and soft on the inside, these kale and

cheese balls are a delicious addition to any meal.Serve with a little

ketchup or tomato sauce, or try spooning one of our calcium-rich

pasta sauces over them.

 

Preheat oven to 325F.

 

In a large pot, steam kale until soft; allow to cool. Squeeze out

excess moisture and transfer to a large bowl. Add remaining

ingredients and mix well.

 

With your hands, shape mixture into small balls about 1 1/4 inches

round. Place on baking sheet Bake 35 to 40 minutes, turning them over

after first 15 minutes.
