David & Rachelle Bronfman Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 bunches broccoli -- chopped - about 2 pounds 1/2 tablespoon olive oil 3 tablespoons orange juice 1 1/2 tablespoons soy sauce 2 1/4 teaspoons dijon mustard 1 teaspoon brown sugar 1/2 teaspoon ground ginger This simple-to-make side dish is light and tasty. As the broccoli sautees, it softens and breaks up into smaller, more flavorful pieces. Tip: To enhance the color of this dish, add 1/2 cup each of chopped steamed red and yellow bell peppers. Lightly steam broccoli until tender-crisp. Set aside. In a saucepan, heat oil over medium heat. Add orange juice, soy sauce, mustard, brown sugar and ginger; simmer for 1 minute. Add broccoli and toss to coat. Simmer for 3 minutes.
