Guest guest Posted October 3, 2001 Report Share Posted October 3, 2001 * Exported from MasterCook * Cream Of Broccoli Soup Recipe By : The Cooking Cardiologist, by Richard Collins, page 78 Serving Size : 4 Preparation Time :0:00 Categories : Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound bag frozen chopped broccoli 3 cups vegetable broth 2 tablespoons dry minced onions 2 cups Edensoy Organic Soy Beverage 1/4 cup cornstarch 1/2 teaspoon ground thyme Serving Size: 4 In a large saucepan, combine the broccoli, 1 cup vegetable broth and dry minced onion. Bring to a boil. Reduce the heat. Cover and simmer for 8 to 10 minutes or until broccoli is tender. Transfer the broccoli mixture to a blender or food processor. Process until nearly smooth. Return the mixture to the saucepan and sat aside. In a small bowl, stir together 1/4 cup of the soy milk and the cornstarch until smooth. Then stir the cornstarch mixture into the broccoli mixture. Add the remaining 2 cups of broth and 1 3/4 cups soy milk. Cook and stir until thickened. Do not boil. Add the thyme, continue cooking and stirring 2 to 3 minutes more.
