Guest guest Posted October 3, 2001 Report Share Posted October 3, 2001 * Exported from MasterCook * Creamy Potato Salad with Green Peas and Cress Recipe By :Dana Jacobi Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds small red-skinned new potatoes 1/2 small green bell pepper -- chopped 1/2 cup frozen green peas -- defrosted 2 tablespoons finely chopped shallots 1/4 cup chopped fresh dill 1/2 cup watercress leaves Dressing: 1/4 cup silken tofu 1/4 cup soy sour cream 1 tablespoon fresh lemon juice 1 tablespoon red wine vinegar 1 teaspoon wasabi paste 1 teaspoon olive oil salt and freshly ground black pepper Place the potatoes in a pot, cover with cold water, and bring to a boil over high heat. Reduce the heat and cook until the potatoes are tender when pierced with a knife, about 15 minutes from when the water boils. Drain. When the potatoes are cool enough to handle, halve or quarter them, depending on their size, and place them in a bowl. Add the green pepper, peas, shallots, and dill to the potatoes. To make the dressing, combine the tofu, sour cream, lemon juice, vinegar, and wasabi in a blender or food processor and puree. Blend in the oil and season to taste with salt and pepper. Pour the dressing over the potato salad, and toss to blend. Add the watercress and toss until evenly combined. Adjust the seasonings, and serve.
